  • 1/4 cup vegetable oil
  • 6 cloves of garlic, minced

  • 4 green chilies, sliced diagonally
  • 2 teaspoons salt
  • 1/4 cup tamarind juice
  • 2 tablespoons sugar
  • Water as needed

Directions

Step 1: Begin by grinding your mustard seeds, fennel seeds, coriander seeds, and cumin seeds into a fine powder. Once you've done so, mix in the turmeric powder and chili powder.

Step 2: Cut your chicken thighs into small pieces and rub them in the seasoning mixture. Make sure each piece of chicken is well coated.

Step 3: Heat your oil over medium-high heat in a large frying pan. When hot, add your minced garlic, chopped onion, and sliced green chilies. Sautee for around 2-3 minutes, or until onions become translucent.

Step 4: Add your seasoned chicken to the pan, and continue to sautee for another 5-6 minutes, or until the chicken is cooked through and golden brown.

Step 5: Add in your water as needed, along with the salt, tamarind juice, and sugar. Reduce heat to low and gently stir everything together. Let simmer for 15-20 minutes, or until the sauce has thickened and your chicken is well-marinated.
