For the rice:

  • 2 cups of white rice
  • 4 cups of water
  • 1 stalk lemongrass, bruised
  • 3 slices of ginger
  • 1 tsp of salt
  • 1/2 tsp of blue pea flowers (bunga telang)
  • 1/2 tsp of tamarind paste

For the kerabu:

  • 1 cup of mixed herbs - parsley, mint and basil leaves
  • 1/2 cup of finely sliced *if possible, shaped* long beans
  • 1/2 cup of thinly sliced purple cabbage
  • 1/2 cup of grated coconut, dry roasted and mixed with a pinch of salt
  • 1/2 cup of dry roasted peanuts, coarsely crushed
  • 1/4 cup of thinly sliced kaffir lime leaves
  • 1/4 cup of thinly sliced turmeric leaves (optional)
  • 3 tbsp of tamarind paste (add water to it and mix well)
  • 3 tbsp of palm sugar
  • 2 tbsp of fish sauce
  • 2 tbsp of lime juice
  • 2 bird's eye chillies, pounded (optional)
  • 1 shallot, thinly sliced (optional)

Instructions:

  • Wash the rice and put it in a rice cooker or pot with the water, lemongrass, ginger and salt. Cook until done.
  • Add blue pea flowers and tamarind paste to the rice and mix well.
  • Spoon the rice onto a platter to cool.
  • Mix all of the ingredients for the kerabu in a bowl and mix well.
  • Plate the kerabu mixture on top of the rice.
  • Serve and enjoy!
