  1. In a large skillet, heat up the olive oil over medium heat. Add in the chicken and season with cumin, chili powder, paprika, garlic powder, salt and pepper.
  2. Cook the chicken for about 5 minutes, until cooked through. Remove the chicken from the skillet and set aside.
  3. Add the onion and garlic to the same skillet and cook for 2-3 minutes, until softened.
  4. Add the peppers, black beans and corn to the skillet with the onion and garlic. Cook for another 5-7 minutes, until everything is heated through.
  5. Add the chicken back to the skillet and stir well to combine all the flavors. Cook for another minute or two.
  6. Add the cooked jasmine rice to the skillet and mix everything together until well combined. Cook for another minute or two.
  7. Garnish with fresh cilantro and lime wedges.
