  • 4 cloves of garlic, minced
  • 1 inch ginger, sliced thinly
  • 3 stalks of lemongrass, smashed
  • 2 cups water
  • 2 tbsp. cornstarch
  • 2 tbsp. water
  • 1 tbsp. salt
  • 1 tbsp. sugar
  • 3 tbsp. chili paste
  • 2 tbsp. dark soy sauce
  • 2 tbsp. cooking oil

Instructions

  1. Heat the cooking oil in a pan over medium heat. Add in the sliced shallots, minced garlic, and sliced ginger. Sauté until fragrant.
  2. Add in the smashed lemongrass and chicken pieces. Stir until the chicken is cooked through.
  3. In a separate bowl, mix together the cornstarch and 2 tbsp. water until smooth. Set aside.
  4. Add in the chili paste, dark soy sauce, salt, and sugar. Stir to mix well.
  5. Pour in 2 cups of water and bring to a boil.
  6. Simmer for 20-25 minutes or until the sauce has thickened and the chicken is tender.
  7. Turn off the heat and let the dish cool for a few minutes.
  8. Mix in the cornstarch mixture and stir well. This will thicken the sauce and give it a smooth texture.
