Hey y'all! Today, I'm sharing with you a delicious recipe for Ikan Kembung Kukus Goreng, a traditional Malaysian dish.

Ingredients:

  • 1 whole Ikan Kembung (Mackerel)
  • 3 tablespoon of chili paste
  • 2 tablespoon of belacan (shrimp paste)
  • 1 teaspoon of sugar
  • 2 teaspoon of tamarind juice
  • 1 onion, thinly sliced
  • 2 cloves of garlic, chopped
  • 1 tablespoon of salt
  • 1 tablespoon of vegetable oil
  • Water

For the frying batter:

  • 1 cup of all-purpose flour
  • 1 tablespoon of cornstarch
  • 1 teaspoon of salt
  • 1 cup of water

Instructions:

  1. Clean the fish and make slits on both sides. Rub salt all over the fish and let it sit for 30 minutes.
  2. In a bowl, mix together chili paste, belacan, sugar, tamarind juice, onion, garlic and salt. Add enough water to make a paste.
  3. Spoon the mixture into the slits of the fish.
  4. Steam the fish for 10 minutes.
  5. In the meantime, make the frying batter by mixing flour, cornstarch, salt and water together. The batter should be smooth and thick.
  6. Heat vegetable oil in a pan. Dip the steamed fish in the frying batter, making sure it's well coated. Fry until crispy and golden brown on both sides.
  7. Remove the fish from the pan and let it rest on a paper towel to remove excess oil.
  8. Serve the Ikan Kembung Kukus Goreng with hot steamed rice and your favourite side dishes.
