Ingredients:

- 500g ikan tongkol (skipjack tuna)

- 4 tbsp oil

- 1 cinnamon stick

- 4 cardamom pods

- 2 star anise

- 2 cloves

- 1 onion, sliced

- 3 garlic cloves, sliced

- 2 lemongrass stalks, bruised

- 3 kaffir lime leaves

- 1 tsp turmeric powder

- 2 tsp coriander powder

- 1 tsp cumin powder

- 2 cups coconut milk

- 1 cup water

- Salt to taste

- 1 tbsp tamarind paste diluted with 4 tbsp water

- 1 tbsp palm sugar

Instructions:

1. Clean and cut the ikan tongkol into serving pieces.

2. Heat 2 tbsp oil in a pan and fry the fish until brown. Set aside.

3. In the same pan, add the remaining 2 tbsp oil and sauté the cinnamon stick, cardamom pods, star anise, and cloves until fragrant.

4. Add the onion, garlic, lemongrass, and kaffir lime leaves. Stir until the onion is soft and fragrant.

5. Add the turmeric powder, coriander powder, and cumin powder. Stir for 2 minutes.

6. Add the coconut milk and water. Stir until well combined.

7. Add the fried ikan tongkol and let it simmer for 10 minutes.

8. Add salt, tamarind paste, and palm sugar. Stir until well combined and the palm sugar is melted.

9. Simmer for another 10 minutes until the ikan tongkol is cooked and the flavors are well blended.

10. Serve hot with Nasi Dagang and any vegetable of your choice. Enjoy!
